Though the menu does not hide its local roots, they have been modernised with aplomb. The selection of gourmet menus all contribute, without exception, to a singular taste experience. Among the temptations: shredded crab with lime, quinoa and crisp vegetables, sand dab with morel mushroom stuffing, green asparagus and fresh broad beans and even some venison. Keep some room for the unforgettable grapefruit soufflé, with Campari granite and grapefruit sorbet.
