Though the menu does not hide its local roots, they have been modernised with aplomb. The selection of gourmet menus contributes, without exception, to a singular taste experience. Among the temptations: filet of smoked eel, some game pâté en croute with savory and oregano, or beetroots in honey and Port wine. Next is the pike caught from local rivers and served with crispy fish dumplings or a hare à la royale, with puff rye spaetzle. Keep some room for the unforgettable grapefruit soufflé, with Campari granite and grapefruit sorbet. Impeccable, attentive service complements a wine list that navigates with intelligence between national and local Grands Crus, as well as lesser-known greats.
