A landmark in Ajaccio since 1986, Le Bilboq stands out with its single dish: the perfect spaghetti lobster.

All of Ajaccio jostles to get in here. Politicians and travellers especially favour the whimsical and fresh atmosphere that has made the reputation of the place. It is a joyful locale full of character, where the history of the city can be felt in full, between nostalgia and Corsican fervour.

The walls display beautiful black-and-white photos, with scenes from the countryside and personalities of the island, all illuminated by charming candlesticks.

Known amongst regulars as “Chez Jean-Jean”, Le Bilbog offers no menu. This local food institution only has two dishes, the famous lobster served with spaghetti and a single dessert. However, make no mistake, some drive hundreds of kilometres to taste this gourmet cuisine. The crustacean, fished in Corsican waters, can be cooked two ways: flambeed or in boiling water. The spaghetti is of course served al dente. As for the sauce, the recipe has remained a secret, shared only between the father and son running the establishment.

To make the best of the Mediterranean sweet life for either lunch or dinner, add a gorgeous terrace to the proceedings and you hold the promise of a very unique moment to share with family or friends.
