Housed in the monumental cloisters of the church of Santa Maria di Novella, Florence's first gluten-free restaurant is in a dream location for a lunchtime break. Under the beautiful arches of the 13th-century building, the chef and his team serve healthy food that is fresh, organic and tasty.
The organic produce comes from small Tuscan producers, and the centrepiece is quinoa, which they prepare creatively in a thousand and one ways. Dubbed the ‘rice of the Incas', it contains 70% carbohydrates, 15% protein, very little fat, lots of minerals and, especially, no gluten. The space is charming, with big flowerpots and tables set up in the courtyard of the cloister.
