He is a superstar in Brazil. Brother of the multi-starred Michel Troisgros, Claude Troisgros is among the few French chefs to have made a successful go of it in Rio. Regularly named chef of the year and a star of television cooking shows, Troisgros arrived in Brazil more than 30 years ago, and now heads a small empire. Olympe, which he runs with his son Thomas, is the most popular restaurant among gastronomes. His style: classic French cuisine sprinkled with Brazilian flavours, entirely based on fresh market produce. You can choose between a tasting menu, which gives carte blanche to the chef, or the traditional version, which features duck breast with roasted Chinese cabbage, sumac and black olives, or a sautéed slipper lobster with cardoncello mushrooms, asparagus and white wine foam. Desserts are equally delightful: chocolate and red fruits crumble, mango, mint and ginger meringue pie, as well as caramelised passion fruit pancakes all illustrate the chef's fusion spirit.
