Today, Christian Constant manages this famous Toulouse landmark, open seven days a week, which is the rare eating establishment where reservations aren't needed. The interior is a whirl of panelling, stucco mouldings, mosaics, and other Baroque follies that give the restaurant the dimensions of an old brasserie, but with a true bistro style.
In the kitchen, the classics revisited by the chef will not disappoint: homemade pâté with Espelette chili pepper and toasted bread, squid fricassee with chorizo, poultry in herb butter roasted on a spit, and, to celebrate the end of a delicious meal, pick the homemade profiterole or rum baba… A menu drawn between the old and the new, and a succession of delights and pleasures.
