DiverXO's signature dish, the Hannibal Lecter, is a genuine crime scene: duck ravioli, served with fried duck tongues, and a cherry tomato and Tabasco cream.

Dinner at this three-star restaurant in a northern district of Madrid takes two, three, or four hours, with tasting menus ranging from seven to 14 dishes that play on the full range of sensations: spicy, poignant, sweet, etc. The chef is David Muñoz, only in his mid-30s and already famous.

If you're looking for classic cuisine, go elsewhere: XO refers not to cognac but the famous Chinese sauce. There are only 30 seats, so book early you can expect about a three-week wait.
