The Palacio de Cibeles serves carefully prepared local cuisine that is very likely to leave you satisfied. The restaurant is located on the rooftop of the wonderful, fully renovated Madrid city hall, which dominates the Castellana. On summer evenings, the terrace is a must. Chef Adolfo Muñoz, from Toledo, is the son of fruit and vegetable growers and, as such, he is a strong supporter of local products and their unadulterated flavours—to the point where he sometimes does not salt dishes. At the head of a small food empire (several restaurants, a cooking and wine school, a bakery, a pastry shop, and Adolfo Colección, an upscale magazine dedicated to gourmet food), Muñoz also owns vineyards on the outskirts of Toledo (El Cigarral) and an olive grove.
