The Palacio de Cibeles serves carefully prepared local cuisine that is very likely to leave you satisfied. The restaurant is located on the rooftop of the wonderful, fully renovated Madrid city hall, which, from an altitude of 70 m, dominates the Castellana. On summer evenings, the terrace is a must. Chef Adolfo Muñoz, from Toledo, is the son of fruit and vegetable growers and, as such, he is a strong supporter of local products and their unadulterated flavours – to the point when he sometimes barely salts dishes. At the head of a small food empire (several restaurants, a cooking and wine school, a bakery, a pastry shop, and Adolfo Colección, an upscale shop dedicated to gourmet food), Muñoz also owns vineyards on the outskirts of Toledo (El Cigarral) and an olive grove. Which you can sense while browsing the Palacio de Cibeles wine list, boasting some 120 different vintages.
