Clare Smyth, the first and only woman to run a 3-star Michelin restaurant in the UK, started cooking at the age of 16 and now runs this popular establishment of the capital. Focusing on the seasonality of products, she revisits the best of British cuisine with simplicity and creativity: langoustine and veal sweetbread served with fennel, carrot and vin jaune, oxtail stuffed with Roscoff onion, Morecambe bay shrimps with brown butter...
