On the wonderful John Kennedy Corniche, a refined and gourmet establishment welcomes guests in a breath-taking setting. Flanked by a rocky peak, this attractive teak-and-stone restaurant invites guests to take a journey into the deep blue. On two floors, with terraces overlooking the seat, Chez Peron specialises in local fish dishes. The appetisers, main courses, and desserts come at a single price.

We chose to start with bluefin tuna tataki, black Korean garlic, sesame and horseradish crumble, rockfish soup, rouille and bread. The foie gras is served with exotic chutney and tender shoots. This was followed by strips of John Dory, basil squid, raw and cooked fennel, saffron and Espellette pepper velouté, whiting on thin focaccia, and redfish infused with Colonnata bacon. Finally, a Saint Honoré ‘Délice' with raspberries and whipped verbena cream, tangy lemon tart, and a chocolate ‘Théorème du Peron'. Stunning.
