Andrée Rosier, authentic Basque cuisine

First woman to be awarded “Best Craftsman of France”, starred chef Andrée Rosier introduces her signature Basque dishes, her favourite addresses in Tokyo and her inclination for Japanese culture.

Born in Bayonne, in the heart of French Basque country, Andrée Rosier first learnt the trade with Alain Ducasse, Philippe Labbé and Jean-Marie Gautier, among other prestigious chefs. In 2007, at only 28, she won the coveted Meilleur Ouvrier de France (MOF – Best Craftsman of France) award. In 2008, she opened the Rosiers restaurant in Biarritz with her husband Stéphane Rosier. The following year, she won her first Michelin star.

The dynamic chef did not rest her laurels. In love with Japan, she opened Les Rosiers - Bistrot de l'Oie in the Kyōbashi neighbourhood in 2013. Reminiscent of a French brasserie, this restaurant introduced the traditional dishes of her native Basque region (piperade, axoa, chipirons, basquaise chicken…) to local gourmets. The Japanese are fond of her authentic take on gastronomy, combining tasteful and delicate flavours.

In the wake of this remarkable career, 2019 and 2020 are to be exceptional years for the talented chef! Promoted as Knight of the Legion of Honour in January 2019, she thrilled powerful leaders with her culinary skills at the G7 summit in Biarritz in August of the same year. Andrée Rosier has now been chosen by Air France to conceive the menus in Business Class flights from November 2019 to February 2020. For this occasion, she shares her favourite spots in the Japanese capital (the famous fish market, Ueno district and its park), as well as must-go-to addresses, like the Momenya restaurant in Shinjuku.
