Toulouse gastronomy: a discovery in good taste

The discovery of gourmet specialities from the south-west is a necessity in Toulouse.

You cannot stay in Toulouse without tasting the iconic cassoulet, a typical dish of the region, which has been the source of several quarrels between the cities of Toulouse, Carcassonne, and Castel naudary, who all claim its invention.

It is a dish comprised of the white beans of Tarbes and of Toulouse sausage, and is eaten throughout the year in the pink city. The Maison Garcia has held the reputation as the city's best butcher for a long time and is a must visit on your gourmet walk. You will find, of course, the Toulouse sausage, but also other excellent meat sausages. To end on a sweet note, discover the local apple crisp, a puff pastry made with Armagnac-scented fruit. Finish with a taste of violets, another Toulouse speciality, by trying a delicious sorbet at Philippe Faur, made with the aromas of the little flower that once made the fame of the city.
