You will not regret the trip after tasting the proposed menu. Here, the cuisine takes on all its meaning, enhancing the flavours. Every day, depending on the catch of the day, market products, and the season, the chef prepares his menu around fresh new flavours that are constantly renewed.

Using creativity that draws on Creole tradition, Coliné combines unusual ingredients that always find a happy harmony. A fish and a meat choice are offered daily; for example, sea bream fillet with pineapple or lamb chops with ginger, lima beans and melon, followed by a supreme de gratin of green bananas – all are simply divine.

And to end on a sweet note, a sweet potato fondant. The chef shares his passion for Guadeloupe products through his original recipes, while the setting offers a beautiful view of the sea.
