He is a superstar in Brazil. Brother of the multi-starred Michel Troisgros, Claude Troisgros is among the few French chefs to have made a successful go of it in Rio.
Regularly named chef of the year and a star of television cooking shows, Troisgros arrived in Brazil more than 30 years ago, and now heads a small empire. Olympe, which he runs with his son Thomas, is the most popular restaurant among gastronomes. His style: classic French cuisine sprinkled with Brazilian flavors, entirely based on fresh market produce. You can choose between a tasting menu, which gives carte blanche to the chef, or the traditional version, which features lamb sautéed with shiitake mushrooms, duck with passion fruit, and salmon en croûte with cassava sauce.
Desserts are equally delightful: crème brûlée; chocolate mousse with red pepper cream; and a perfectly executed fusion take on dulce de leche.
