If you manage to book a table at Noma, consider yourself lucky, very lucky…
In 2008, it acquired two Michelin stars, and since 2010, it has been listed four times as the world's best restaurant by Restaurant magazine (in 2010, 2011, 2012, and 2014 respectively). Its chef, René Redzepi, reinvents Nordic gastronomy extremely audaciously, to the point of sometimes shocking diners. Noma is in fact an acronym for Nordic gastronomy: ‘Nordisk Mad'.
So be warned that your culinary experience here will be unique, away from stilted or established standards. You will not find a tablecloth on Noma tables and the servers, adorable modern-day Vikings with tattooed arms, bring you the 20 dishes that make up the tasting menu with a certain nonchalance. The number of dishes might sound scary, but the well-thought-out proportions don't make you feel the heaviness characteristic of many more traditional meals.
