Kandil is the chef in command of this culinary journey through contemporary Morocco. He has left nothing to chance and works every taste and texture to bring a dish to an extreme degree of refinement.

Rabat is primarily a fishing port, so fish are in the spotlight, such as sole, tuna, and swordfish. The chef's specialty though is bream. Depending on the season, each one is prepared in a special way and accompanied with vegetables from an organic-market gardener in Salé. Enjoy all these dishes for lunch or dinner in a seaside atmosphere that is as chic as the dishes themselves.
