Every day, the 4×4 ballet is identical. Cars going to or coming back from a visit to the Tsingy national park stop in front of the Mad Zébu at lunchtime. Here, there's no valet parking and no pretentious service; the welcome is simple and warm, and, being that you are in the middle of the countryside, the menu is listed on a slate. Onja, the chef and owner, is a true food enthusiast who graduated from working in several hotels. The reputation of his work, which meets high international gastronomic standards, cannot be in doubt.
Local products are to be found in dishes from the beginning to the end of the meal. The tilapia terrine with black olives and tamarind vinaigrette is delicious, as is the zebu steak with Cape gooseberries, always perfectly presented. Another nice surprise is the choice of desserts, the stylistic apotheosis of the chef, which range from fried tropical fruits with spices, to papaya tartare.
