A true Marsellais, Passedat is renowned for his humanity and the joy he takes in sharing his adventures with fishermen and local producers, who, every day, ship him their most delectable products, which he quickly transforms into exceptional cuisine.
More than 65 varieties of fish, some modest, others unknown, pass through his kitchens, and all are prepared to full flavoursome perfection.
He also showcases the regions best products: brousse du rove cheese, bottarga, beautiful tomatoes, bay leaves, aubergines, and many other natural wonders, which he invites his guests to sample sur le vif prepared on the spot, when flavours are at their most pronounced.
