Chef Christian Etchebest's béarnaise soul delights taste buds in his third restaurant.

With tables and wooden chairs, metro-tiled bar, rugby shirts, photos of the French rugby team, red and black tiled floor, and slate wall, the decor is like the food served here: authentic. The signature dishes that made the reputation of Chef Etchebest's restaurants in Paris's Pernety and Dupleix neighbourhoods are all here. Razor clams à la plancha, grilled pig's ears and Xistora pork (delicious spiced sausage) are familiar menu items, masterfully performed by the young Gabriel, nephew of Nicolas Gras – a Christian Etchebest acolyte – proving that talent is not measured in years. Besides the classics, there is also tuna loin with beetroot and horseradish cream. You will not be disappointed.
