In the very select club of Japanese-French restaurants that perpetuate the excellent art of sushi, Hinoki is a standard-bearer. This small restaurant with minimalist decor is nestled in a little alley in the centre of Brest. It is owned by chef Xavier Pensec and his Japanese wife, who has retained from her native Tokyo the precision of large sushiyas.
Xavier Pensec selects the best fish in Finistère—bream, bass, mackerel, skipjack tuna and sardines—which he marries with a cooked and seasoned nigiri rice that leaves nothing to chance. Hinoki does not serve bluefin tuna out of respect for the environment. At the counter, guests watch the choreographed rhythm of the Japanese knife as it produces a range of sushi, maki, and chirashi. Though Pensec is Breton, he is a ‘sushi craftsman' in the tradition of the Japanese masters. Reservations are strongly recommended at least 24 hours in advance.
