Healthy cooking from the garden to the plate

It's love at first bite for the restaurant O'zépices and its talented chef, who offers seasonal organic cuisine with medicinal virtues.

In Bouillante, above the sea, 40 privileged diners have the chance each day to taste the recipes of Jimmy Bibrac. This is a kitchen like no other, with products coming from only 50 metres around. How is this possible? Simply by growing vegetables in a large on-site organic garden. There are fruits and vegetables, but also a quantity of aromatic and medicinal plants like lemongrass, basil, sage, and local currants.

For fish, the fishermen bring their catch of the day. Ditto for meat and other poultry. For Bibrac, diet and health are intimately related and the power of plants is above suspicion. He works them in all forms, from dishes to desserts and even herbal teas, offered after a meal and chosen according to what you have eaten.

There is no fixed menu, only the slate with four suggestions for starters, main courses and desserts, all prepared by the chef. These might include chestnut tabbouleh, eggplant stuffed with crab, beef tenderloin with cocoa sauce, served with sweet potato fries and, finally, Rosemary custard. A tasty and beneficial dining experience.
