Chef David Hawksworth's restaurant: a star of West Coast cuisine.

Trained in the best European kitchens, David Hawksworth returned to Canada to bring a shine to Canadian cuisine. A recognised talent, Hawksworth has ensured his eponymous establishment is regularly ranked among the best restaurants for its cuisine and its wine list.

The menu showcases organic local produce and, like many restaurants in town, features Ocean Wise certified fish, which promotes sustainable fishing. Behind the scenes, the chef uses traditional techniques, but his seasonings have hints of Asia: Saint-Jacques scallops caramelised in vermouth cream, Angus steak with rutabaga, green curry Pacific cod and basmati rice. It perfectly symbolises Canadian cuisine, which is as multicultural as the country itself.

The restaurant, located in the Rosewood Hotel Georgia designed by Alessandro Munge, is divided into several areas. There is an atmosphere for every occasion, as you would not choose the same room for a romantic dinner or a business lunch. The lounge bar has masculine accents with its leather covered walls; in the Pearl Room, chandeliers and comfortable seats create a boudoir ambiance; the tone of the Art Room is ‘gallery' with an installation by local artist Rodney Graham; the York Room finds inspiration in the 1920s.
