At 25, Melissa Perello was the executive chef of Charles in Nob Hill before taking the helm at Fifth Floor. Now, happily, she has her own place.

Suffice it to say that San Francisco was on high alert when Melissa Perello decided to strike out on her own and open a restaurant in the Castro District. If you want to discover what California cuisine really is, this is where you need to go.

The bistro menu, minimalist design, sublime dishes, and, according to its regulars, service that is near perfection make it a poster child for today's food. Of course, the chef only works with regional products. The fish come from Monterey, the poultry from Sonoma. The names of the farms are even mentioned on the menu, and the cooking is truly creative.

The crunchy chickpea fries eaten at the bar with your fingers will surprise you.You can try the kale salad with crispy shallots and blue cheese. The vegetarian dishes deserve their culinary acclaim. As for the meats, a cooking secret brings out their incredible taste. You can finish with a fig tart or a chocolate sorbet, all accompanied by wines from Napa.
