Belcanto: a superstar in the kitchen

Beautiful, young, gifted, and endowed with two Michelin stars, José Avillez is singlehandedly reinventing traditional Portuguese cuisine.

After highly acclaimed stints with Eric Frechon at the Bristol in Paris and Ferran Adrià on the Costa Brava, chef José Avillez took over Belcanto in 2011, on the Largo de São Carlos in the historic Baixa district. His forte is Portuguese gastronomy reinvented and modernised by molecular techniques. But nothing is overplayed. The two cosy rooms overlook the kitchen. 

Each dish is a gustatory journey you will not soon forget, starting with the exotically named amuse-bouches: Ginginha Abbey, Olive XL-LX, Lupin …A choice of ‘discovery' and ‘Lisbon' menus follows. Emphasis is on using seasonal ingredients, most often associated with classic elements like salt cod and mackerel. Avillez, a name to remember!
